I recently gave a 3 day training course covering XMPP for System Administrators. As far as I know, this is the first and only formal XMPP course that has been offered.

Now that XMPP is mandated by the US Department of Defense and gaining popularity with other originizations I imagine there are many others out there that will be interested in a class like this.
